Penang Asam Laksa



Ingredients
A (for laksa noodle)
  • 1 packet dry laksa noodles (soaked and boiled until soft with 2 litre water and drained)
B (for gravy)
  • 7 selayang/sardine fish
  • 5 stalks kesum leaves
  • 2 stalks lemon grass (crushed)
  • 1 stalk ginger bud (halved)
  • 2 litre water (for poaching fish)
  • 20 grams shrimp paste
  • 3 piece dried tamarind
  • 2 teaspoons salt
C (blended with 1/2 cup water until fine)
  • 20 dried chilies
  • 2 onions
D (for ulam)
  • 1/2 pineapple (sliced thinly lengthwise)
  • 1 stalk lettuce (sliced thinly)
  • 2 stalks mint leaves
  • 1 cucumber (sliced thinly lengthwise)
  • 2 red chilies (sliced thinly)
  • 3 lime (halved)
  • 3 boiled eggs (halved)
  • 1 stalk ginger bud (blended until fine)
  • 1 onion (sliced thinly)
Preparations
  1. Poach the fish. Separate the flesh from the bones. Grind the flesh until fine.
  2. Grind fish bones and head with fish stock. Sieve the stock.
  3. Bring fish stock to boil. Add C's ingredients, lemon grass, ginger bud, kesum leaves, fish stock, dried tamarind and mix.
  4. Add shrimp paste, salt and mix well.
  5. Add in grounded fish meat and cook until well mixed.
  6. Serve with ulam ingredients.

Bahan
A (untuk laksa)
  • 1 bungkus laksa (direndam dan direbus bersama 2 liter air dan ditos)
B (untuk kuah)
  • 7 ekor ikan selayang/sardin
  • 5 tangkai daun kesum
  • 2 batang serai (dititik)
  • 1 batang bunga kantan (dibelah 2)
  • 2 liter air (untuk rebus ikan)
  • 20 gram belacan
  • 3 keping asam keping
  • 2 sudu teh garam
C (dikisar dengan 1/2 cawan air sehingga lumat)
  • 20 tangkai cili kering
  • 2 ulas bawang besar
D (untuk ulam)
  • 1/2 nenas (dihiris nipis memanjang)
  • 1 pokok daun salad (dihiris nipis)
  • 2 tangkai daun pudina
  • 1 timun (dihiris nipis memanjang)
  • 2 biji cili merah (dihiris nipis)
  • 3 biji limau kasturi (dibelah 2)
  • 3 biji telur rebus (dibelah 2)
  • 1 batang bunga kantan (dikisar halus)
  • 1 ulas bawang besar (dikisar halus)
Cara
  1. Rebus ikan. Asingkan isi dari tulang. Kisar isinya hingga agak hancur.
  2. Kisarkan juga tulang serta kepala ikan dengan air rebusan. Tapiskan air kisaran.
  3. Didihkan air rebusan ikan. Masukkan bahan C, serai, bunga kantan, daun kesum, air tapisan tulang ikan, asam keping dan kacau.
  4. Masukkan belacan dan garam dan kacau sebati.
  5. Masukkan isi ikan yang telah dikisar dan kacau sebati.
  6. Hidang bersama bahan ulam.

Lala With Lemon Grass

Ingredients
  • 500 grams lala
  • 4 garlic (blended)
  • 3 onions (blended)
  • 2 cm ginger (blended)
  • 1 teaspoon turmeric powder
  • 6 ............cili padi
  • 3 lemon grass
  • 1/2 carrot (finely cut)
  • 400 ml water
  • salt
Preparations
  1. Mix lala with turmeric and set aside.
  2. Fry blended ingredients.
  3. Put in lemon grass, ......cili padi and carrot.
  4. Next is lala and water.
  5. Cook well until lala's shell open and add salt.

Lala Masak Serai Bahan
  • 500 gram lala
  • 4 ulas bawang putih (dikisar)
  • 3 ulas bawang merah (dikisar)
  • 2 cm halia (dikisar)
  • 1 sudu teh serbuk kunyit
  • 6 biji cili padi
  • 3 batang serai
  • 1/2 batang lobak (dihiris)
  • 400 ml air
  • garam
Cara
  1. Campur lala dengan serbuk kunyit dan ketepikan.
  2. Tumis bahan yang telah dikisar.
  3. Masukkan serai, cili padi dan lobak.
  4. Seterusnya lala dan air.
  5. Masak sehingga cengkerang lala terbuka dan tambah garam.

Grilled Chicken With Gravy



Ingredients
A (pounded finely or blended)
  • 7 shallots
  • 3 garlic
  • 2 cm ginger
  • 3 candlenuts
  • 1 chicken
  • 300 ml coconut milk (150 ml thick coconut milk + 150 ml thin coconut milk)
  • 2 stalks lemon grass (crushed)
  • 2 tablespoons tapioca flour (mix with a bit of water)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 40 grams tamarind paste (mixed with 1/2 cup of water)
Preparations
  1. Cut the chicken into half and clean it.
  2. Mix chicken together with 1/2 of the A's ingredients and marinate for 1 hour.
  3. Pour coconut milk into a pot and mix in the A's balance.
  4. Mix well over medium heat.
  5. Once boil, add lemon grass, tamarind juice, sugar and salt. To thicken gravy, add in tapioca flour mixture and stir slowly. Once gravy thicken, remove.
  6. Grilled marinated chicken. Spread gravy bit by bit over the chicken during the grilling process.
  7. Stir the chicken to ensure that the gravy sticks onto the chicken.
  8. Grill until the chicken is cooked.
  9. Serve and pour the balance of the gravy over the chicken.

Ayam Percik

Bahan
A (ditumbuk halus atau dikisar)
  • 7 ulas bawang merah
  • 3 ulas bawang putih
  • 2 cm halia
  • 3 biji buah keras
  • 1 ekor ayam
  • 300 ml santan (150 ml santan pekat + 150 ml santan cair)
  • 2 batang serai (dititik)
  • 2 sudu tepung ubi (dibancuh dengan sedikit air)
  • 1 sudu teh gula
  • 1 sudu teh garam
  • 40 gram asam jawa (dibancuh dengan 1/2 cawan air)
Cara
  1. Ayam dibelah dua dan dibersihkan.
  2. Gaul ayam bersama separuh dari bahan A dan perap selama 1 jam.
  3. Masukkan santan ke dalam periuk dan campurkan baki bahan A.
  4. Kacau hingga sebati di atas api sederhana.
  5. Apabila mendidih, masukkan serai, air asam jawa, gula dan garam. Untuk memekatkan kuah, masukkan bancuhan tepung ubi dan kacau perlahan. Angkat kuah apabila telah pekat.
  6. Panggang ayam yang telah diperap. Tuang kuah sedikit demi sedikit ketika memanggang.
  7. Balikkan ayam supaya kuah melekat pada ayam.
  8. Panggang sehingga masak.
  9. Hidang dan tuang baki kuah pada ayam.

Corn Flakes & Walnut Crisps


Ingredients
A

  • 45 grams butter/margarine
  • 60 grams icing sugar (sifted)
  • 1 1/2 beaten eggs
  • 1 1/2 teaspoons vanilla essence
B
  • 50 grams plain flour
  • 65 grams walnuts (chopped coarsely)
  • 2 cups Nestle Corn Flakes
Preparations
  1. Line baking tray with aluminum foil and greased it.
  2. Cream A's ingredients for 3 minutes and add B's ingredients, mix well.
  3. Put mixture into baking tray, spread thinly and evenly.
  4. Bake in a preheated oven at 180 Celcius for 12 - 15 minutes or until it turn lightly brown.
  5. Once it is cool, break the crisps into pieces.
  6. Serve it with ice cream.

  • 1 1/2 sudu teh esen vanila
B

  • 2 cawan Nestle Corn Flakes
Cara
  1. Line baking tray with aluminum foil and greased it.
  2. Cream A's ingredients for 3 minutes and add B's ingredients, mix well.

Thai Chicken Curry


Ingredients
  • 200 gram Marigold Evaporated Filled Milk
  • 400 gram skinless chicken fillet (sliced)
  • 1 tablespoon oil
  • 2 tablespoon prepared Thai curry paste
  • 1 zucchini (cut into strips)
  • 1 red capsicum (cut into strips)
  • 2 pieces kaffir leaves (shredded)
  • 1 sprig coriander leave
  • salt
Preparations
  1. Heat oil in pan and add curry paste.
  2. Add chicken and stir well.
  3. Add in vegetables, Marigold Evaporated Filled Milk and salt to taste.
  4. Bring to boil and allow to simmer for 5 minutes.
  5. Stir in kaffir and coriander leaves.

Bahan
  • 200 gram Susu Isian Sejat Marigold
  • 400 gram daging ayam tanpa kulit (dihiris)
  • 1 sudu besar minyak
  • 2 sudu besar rempah kari Thai

  • 1 lada benggala merah (dihiris)
  • 2 helai daun kaffir (disiat)
  • 1 tangkai daun ketumbar
  • garam
Cara
  1. Panaskan minyak dalam kuali dan masukkan rempah kari.
  2. Masukkan ayam and kacau.
  3. Tambahkan sayuran, Susu Isian Pekat Marigold dan garam secukup rasa.
  4. Masak hingga mendidih dan biarkan selama 5 minit.
  5. Masukkan daun kaffir dan ketumbar.

Thai Beef and Noodles Stir Fry


Ingredients
  • 500 gram beef (sliced)
  • 2 tablespoons garlic (crushed)
  • 2 tablespoons chili (chopped)
  • 6 spring onion
  • 1/2 red capsicum (cut into strips)
  • 1 red salad onion (cut into 8)
  • 1/2 cup mint leaves (shredded)
  • 1 tablespoon brown sugar
  • 600 gram mehon (soaked)
  • 2 tablespoons oil
  • 1 tablespoon fish sauce
  • 125 gram bean sprout
Preparations
  1. Mix beef with oil, garlic and chili.
  2. Heat wok and stir fry beef in small batches 1-2 minutes. Remove when cooked and allow wok to reheat before stir fry next batch.
  3. Add onion, capsicum, spring onions and bean sprout to wok with a sprinkling of water. Cook stirring constantly for 2-3 minutes. Remove from wok.
  4. Heat noodles in wok, stirring constantly. Add fish sauce and brown sugar and toss well. Return beef and vegetables. Heat and toss thoroughly.

Bahan
  • 500 gram daging (dihiris)
  • 2 sudu besar bawang putih (dikisar)
  • 2 sudu besar cili (dipotong)
  • 6 batang daun bawang
  • 1/2 biji lada benggala merah (dipotong memanjang)
  • 1 biji bawang besar (dipotong 8)
  • 1/2 cawan daun pudina (dihiris)
  • 1 sudu besar gula perang
  • 600 gram mehun (direndam)
  • 2 sudu besar minyak
  • 1 sudu besar sos ikan
  • 125 gram tauge
Cara
  1. Gaul daging dengan minyak, bawang putih dan cili.
  2. Panaskan kuali dan goreng daging dalam kumpulan kecil selama 1-2 minit. Angkat setelah masak dan goreng daging selebihnya.
  3. Masukkan bawang lada benggala, daun bawang dan tauge ke dalam kuali dengan sedikit air. Kacau selama 2-3 minit dan angkat.
  4. Masukkan mihun dan kacau rata. Tambahkan sos ikan dan gula perang, kacau sebati. Masukkan daging dan sayur. Kacau lagi hingga masak.

Cinnamon Star


Ingredients

A (cookies)

  • 500 gram ground almonds
  • 400 gram sugar
  • 100 gram egg white
  • 100 gram icing sugar
  • 10 gram cinnamon powder
B (icing)
  • 250 gram icing sugar
  • 40 gram egg white
Preparations
  1. In a mixer, cream together the sugar and egg white. When that's done, add icing sugar.
  2. Slow down the mixer a little and stir in almonds and cinnamon powder.
  3. Mix it to form a dough.
  4. Now for the royal icing that goes on top of the cookie dough, blend icing sugar and egg white to a mousse. Once done, put aside.
  5. Then spread the royal icing on top of the rolled out dough.
  6. Cut out the star shape.
  7. Lastly, place them onto a greased baking tray and bake at 180C for 15 minutes.

Bahan

A (biskut)

  • 500 gram serbuk badam
  • 400 gram gula
  • 100 gram putih telur
  • 100 gram gula ising
  • 10 gram serbuk kulit kayu manis
B (ising)
  • 250 gram gula ising
  • 40 gram putih telur
Cara
  1. Di dalam pengadun, adun bersama gula dan putih telur. Setelah itu, tambah gula ising.
  2. Perlahankan pengadun dan masukkan badam dan serbuk kulit kayu manis.
  3. Uli supaya menjadi doh.
  4. Untuk ising yang akan diletak atas biskut, adu gula ising dan putih telur sehingga menjadi mousse. Setelah itu, ketepikan.
  5. Sapukan ising di atas doh yang telah dicanai.
  6. Tekap dengan acuan berbentuk bintang.
  7. Akhirnya, susun di atas dulang pembakar dan bakar 180C selama 15 minit.

Hazelnut Leaf


Ingredients
  • 250 gram butter
  • 250 gram sugar
  • 125 gram eggs
  • half lemon (peel of)
  • 500 gram flour
  • 5 gram cinnamon powder
  • 250 gram ground hazelnut
Preparations
  1. Blend together butter and sugar until creamy.
  2. Add eggs and lemon.
  3. Stir in flour, cinnamon powder and ground hazelnut.
  4. Once it is a heavy dough, roll it out to a 1cm thickness.
  5. Cut into heart shaped cookie cutter and split into two.
  6. With the back of a small knife, engrave the veins of a leaf .
  7. Finally bake it at 180C for around 15-18 minutes.

Daun Hazelnut

Bahan
  • 250 gram mentega
  • 250 gram gula
  • 125 gram telur
  • setengah lemon (dikupas)
  • 500 gram tepung
  • 5 gram sebuk kulit kayu manis
  • 250 gram hazelnut
Cara
  1. Adun bersama mentega dan gula hingga berkrim.
  2. Tambahkan telur dan lemon.
  3. Masukkan tepung, serbuk kulit kayu manis dan hazelnut.
  4. Setelah menjadi doh, uli setebal 1cm.
  5. Tekap acuan berbentuk hati dan potong dua.
  6. Dengan menggunakan belakang pisau, ukir seperti urat daun.
  7. Akhirnya bakar pada suhu 180C selama 15-18 minit.

Red Beef Curry


Ingredients
  • 500 gram beef strip
  • 4 tablespoons Thai basil/coriander (chopped)
  • 80 gram button mushrooms (sliced)
  • 2 tablespoons red curry paste
  • 1/2 red capsicum (cut in strips)
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic (crushed)
  • 2 tablespoons oil
  • 1 tablespoon fish sauce
  • 80 gram spinach (chopped)
  • 300ml coconut milk
Preparations
  1. Mix beef strips with oil and garlic.
  2. Heat wok on high. Stir fry beef strips in small batches for 1-2 minutes. Remove when cooked and allow wok to reheat before stir frying next batch.
  3. Add capsicum and mushrooms to wok with a sprinkling of water. Cover and steam 1-2 minutes. Return stir fried beef strips.
  4. Add red curry paste, brown sugar, fish sauce, coconut milk, spinach and basil or coriander. Toss to heat through about 1-2 minutes.

Bahan
  • 500 gram kepingan daging lembu
  • 4 sudu besar daun basil Thai/ketumbar (dihiris)
  • 80 gram cendawan butang (dihiris)
  • 2 sudu besar rempah kari merah
  • 1/2 lada benggala merah (dihiris panjang)
  • 1 sudu besar gula perang
  • 1 sudu besar bawang putih (diketuk)
  • 2 sudu besar minyak
  • 1 sudu besar sos ikan
  • 80 gram bayam (dihiris)
  • 300ml santan
Cara
  1. Gaulkan kepingan daging dengan minyak dan bawang putih.
  2. Panaskan kuali dan goreng daging dalam kumpulan kecil selama 1-2 minit. Angkat setelah masak dan goreng daging selebihnya.
  3. Masukkan lada benggala dan cendawan ke dalam kuali dengan sedikit air. Tutup dan biarkan 1-2 minit. Masukkan daging tadi.
  4. Tambahkan rempah kari merah, gula perang, sos ikan, santan, bayam dan daun basil atau or coriander. Toss to heat through about 1-2 minutes.

Red Fish Soup


Ingredients
  • 500 grams fish flesh
  • 2 potatoes (cut into 4)
  • 1 carrot
  • 1 tomato (cut into 4)
  • 1 onion (blended)
  • 1 inch ginger
  • 2 garlic
  • 1 tablespoon soup powder
  • 4 cups of water
  • coriander leaves
  • spring onion
Preparations
  1. Heat water until boiled. Add in onions, ginger and soup powder.
  2. Put in potato and carrot.
  3. Leave to boil over medium heat for 30 minutes.
  4. Add in salt, spring onion and coriander leaves.
  5. Serve it.

Sup Ikan Merah

Bahan
  • 500 grams isi ikan
  • 2 biji kentang (dibelah 4)
  • 1 batang lobak
  • 1 biji tomato (dibelah 4)
  • 1 ulas bawang (dikisar)
  • 1 inci halia
  • 2 ulas bawang putih
  • 1 sudu besar rempah sup
  • 4 cawan air
  • daun ketumbar
  • daun bawang
Cara
  1. Masak air sehingga mendidih. Masukkan semua bawang halia, rempah sup.
  2. Masukkan kentang dan lobak.
  3. Biarkan mendidih dengan api sederhana untuk 30 minit.
  4. Tambah garam, daun bawang dandaun ketumbar.
  5. Hidangkan.

Corn Flakes Chocolate Rice

Ingredients
  • 3 cups tapioca flour
  • 1 cup plain flour
  • 100 grams Nestle Corn Flakes (finely ground)
  • 300 grams butter/margarine
  • 1/2 cup caster sugar
  • 2 eggs
  • 1/2 teaspoon vanilla essence
  • 1 egg white (lightly beaten)
  • Nestle Corn Flakes for decoration
  • colourful chocolate rice
Preparations
  1. Sift together flour and mix in Nestle Corn Flakes, set aside.
  2. Beat well butter, sugar, egg and vanilla essence.
  3. Fold in Nestle Corn Flakes mixture.
  4. Roll out into 3 mm thickness and cut with any desired cookie cutter.
  5. Place well spaced on lightly greased baking trays.
  6. Brush with egg white, decorate with Nestle Corn Flakes and chocolate rice.
  7. Bake in a preheated oven at 180 Celsius for 12 - 15 minutes or until it turn lightly brown.

  • 1 cawan tepung gandum
  • 100 gram Nestle Corn Flakes (kisar halus)
  • 300 gram mentega/marjerin
  • 1/2 cawan gula kastor
  • 2 biji telur
  • 1/2 sudu teh esen vanila
  • 1 putih telur (dipukul)
  • Nestle Corn Flakes untuk hiasan
  • chocolate rice berwarna
Cara
  1. Ayak bersama tepung dan masukkan Nestle Corn Flakes, ketepikan.
  2. Pukul mentega, gula, telur dan esen vanila.
  3. Kaup balikkan campuran Nestle Corn Flakes.
  4. Canai doh setebal 3 mm dan terap dengan acuan kesukaan.
  5. Letakkan di atas dulang pembakar yang dilenser.
  6. Sapu dengan putih telur, hias dengan Nestle Corn Flakes dan chocolate rice.
  7. Bakar pada suhu 180 Celcius selama 12-15 minit atau sehingga masak.

Spicy Prawn

Ingredients
  • 1kg fresh prawn
  • 250 grams chilies (blended)
  • 1 onion (finely chopped)
  • 3 small onions (finely chopped)
  • 2 garlics (finely chopped)
  • 1 tomato (cut into 2)
  • sugar and salt
  • oil
Preparations
  1. Wash the prawns. Take off the head and tail.
  2. Heat wok, fry small onions and garlic. Then, put in chilies.
  3. After the chilies cooked, put in tomato and onion.
  4. Then, prawn, sugar and salt.
  5. Cook for about 5 minutes and serve it.

Sambal Udang Pedas

Bahan
  • 1kg udang segar
  • 250 gram cili (dikisar)
  • 1 biji bawang besar (dihiris)
  • 3 biji bawang merah (dihiris)
  • 2 biji bawang putih (dihiris)
  • 1 tomato (belah 2)
  • gula dan garam
  • minyak
Cara
  1. Basuh udang. Buang kepala dan ekor.
  2. Panaskan kuali, tumis bawang merah dan bawang putih. Setelah itu tumis cili.
  3. Setelah cili masak, masukkan tomato dan bawang besar.
  4. Masukkan udang, gula dan garam.
  5. Masak selama 5 minit dan sedia dihidang.
