Ayam Sambal Bali

Ayam Sambal Bali

Bahan A (dikisar)
1 genggam cili kering
6 labu bawang besar
1 labu bawang putih
2 inci halia
3 inci belacan bakar
2 sudu kecil garam halus

Bahan B (digaul)
1 ekor ayam (dipotong kecil2)
2 sudu besar serbuk kunyit
1 sudu kecil garam halus

Bahan C
5 batang serai (dititik)
6 tangkai daun kari
3 sudu besar gula
Kicap lemak manis
Minyak

Cara - cara
  1. Panaskan minyak.
  2. Gorengkan ayam yang dah digaul kunyit dan garam separuh masak. Tak perlu garing.
  3. Sementara tunggu semua ayam masak. Kisar bahan A.
  4. Angkat ayam.
  5. Goreng serai yang dah dititik guna lebihan minyak goreng ayam tadi sehingga garing.
  6. Masukkan daun kari. Api sederhana.
  7. Masukkan bahan A yang dikisar tadi. Tumis sampai naik bau.
  8. Masukkan gula dan kicap. Tumisan jadi warna maroon.
  9. Masukkan ayam dan gaulkan 10 minit.
  10. Angkat dan rehatkan 30 minit sebelum makan.

Bali's Chicken Sambal

Ingredients A (blended)
1 handful of dried chillies
6 large onions
1 pumpkin of garlic
2 inch ginger
3 inch baked shrimp paste
2 teaspoons salt

Ingredients B (mixed)
1 chicken (cut into small pieces)
2 tablespoons turmeric powder
1 teaspoon salt

Ingredients C
5 lemon grass (smashed)
6 sprigs of curry leaves
3 tablespoons sugar
Sweet soy sauce
Oil

Instructions
  1. Heat the oil.
  2. Fry the marinated chicken until half-cooked.
  3. While waiting for all the chicken to cook. Blend the ingredients A.
  4. Remove the chicken.
  5. Fry the lemon grass with the same oil.
  6. Put the curry leaves. Medium heat.
  7. Put the blended ingredients A. Stir-fry until fragrant.
  8. Put the sugar and soy sauce. Stir till the colour change to maroon.
  9. Add the chicken and stir for 10 minutes.
  10. Lift and rest it for 30 minutes before eat.
