A (blended)
- 10 shallots
- 5 garlic
- 2 cm ginger
- 2.5 cm fresh turmeric
- 15 bird's eye chilies
- 10 dried chilies (soak in hot water or blanched)
- 1/2 chicken (clean, discard skin and fats and cut into 5 portions)
- 1 tomato (cut into 5)
- 6 lime's leaves (sliced thinly)
- 2 turmeric leaves (sliced thinly)
- 1 stalk lemon grass(crushed)
- 1 cup skim milk (1 cup water + 30 grams skim milk powder)
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- red chilies and tomatoes for garnishing
- Heat oil and stir fry A's ingredients until fragrant. Add lemon grass.
- Add chicken, sliced lime and turmeric leaves. Add salt.
- Pour in skim milk. Cover and cook until chicken is soft. Stir occasionally.
- Add in tomatoes and leave awhile.
- Remove. Garnish with red chilies and tomatoes. Serve.
Ayam Lemak Minang
Bahan
A (dikisar)
- 10 ulas bawang merah
- 5 ulas bawang putih
- 2 cm halia
- 2.5 cm kunyit hidup
- 15 biji cili padi
- 10 biji cili kering (direndam dalam air panas atau dicelur)
- 1/2 ekor ayam (dibersih, buang kulit dan lemak dan dipotong 5)
- 1 tomato (dipotong 5)
- 6 helai daun limau purut (diracik halus)
- 2 daun kunyit (diracik halus)
- 1 batang serai (dititik)
- 1 cawan susu skim (1 cawan air + 30 gram susu tepung skim)
- 2 sudu minyak sayur
- 1 sudu teh garam
- cili merah dan tomato untuk hiasan
- Panaskan minyak dan tumis bahan A sehingga garing. Masukkan serai.
- Masukkan ayam, daun limau purut dan daun kunyit. Masukkan garam.
- Masukkan susu skim. Tutup kuali dan biarkan ayam masak. Kacau skali sekala.
- Masukkan tomato. Biarkan sebentar.
- Angkat. Hiaskan dengan cili merah dan tomato dan hidangkan.
