Red Beef Curry


Ingredients
  • 500 gram beef strip
  • 4 tablespoons Thai basil/coriander (chopped)
  • 80 gram button mushrooms (sliced)
  • 2 tablespoons red curry paste
  • 1/2 red capsicum (cut in strips)
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic (crushed)
  • 2 tablespoons oil
  • 1 tablespoon fish sauce
  • 80 gram spinach (chopped)
  • 300ml coconut milk
Preparations
  1. Mix beef strips with oil and garlic.
  2. Heat wok on high. Stir fry beef strips in small batches for 1-2 minutes. Remove when cooked and allow wok to reheat before stir frying next batch.
  3. Add capsicum and mushrooms to wok with a sprinkling of water. Cover and steam 1-2 minutes. Return stir fried beef strips.
  4. Add red curry paste, brown sugar, fish sauce, coconut milk, spinach and basil or coriander. Toss to heat through about 1-2 minutes.

Kari Daging Merah

Bahan
  • 500 gram kepingan daging lembu
  • 4 sudu besar daun basil Thai/ketumbar (dihiris)
  • 80 gram cendawan butang (dihiris)
  • 2 sudu besar rempah kari merah
  • 1/2 lada benggala merah (dihiris panjang)
  • 1 sudu besar gula perang
  • 1 sudu besar bawang putih (diketuk)
  • 2 sudu besar minyak
  • 1 sudu besar sos ikan
  • 80 gram bayam (dihiris)
  • 300ml santan
Cara
  1. Gaulkan kepingan daging dengan minyak dan bawang putih.
  2. Panaskan kuali dan goreng daging dalam kumpulan kecil selama 1-2 minit. Angkat setelah masak dan goreng daging selebihnya.
  3. Masukkan lada benggala dan cendawan ke dalam kuali dengan sedikit air. Tutup dan biarkan 1-2 minit. Masukkan daging tadi.
  4. Tambahkan rempah kari merah, gula perang, sos ikan, santan, bayam dan daun basil atau or coriander. Toss to heat through about 1-2 minutes.
